MILK TART MIX
1 Kilogram self raising flour
500 grams Maizena (corn flour)
800 gram full cream milk powder
1 kilogram sugar
15 ml salt
250 gram butter, grated
Mix all the dry ingredients in a large mixing bowl. Add the margarine and rub it into the dry ingredients until the mixture resembles bread crumbs.
Store in an airtight container and keep in the refrigerator until needed. Will make about 13 large milk tarts, or 20 small ones.
To Bake:
For one pie:
2 cups of the mixture
3 cups of hot water.
3 eggs, separated
1/2 teaspoon cinnamon
1 teaspoon vanilla essence
Mix the water and the milk tart mixture until all the lumps are removed.
Add the yolks of the eggs and blend well. Add the vanilla essence and the cinnamon.
Heat the mixture over a medium heat until it boils. Lower the heat and simmer until the mixture has thickened.
Remove from the stove and cool.
Beat the egg whites till stiff and fold into the mixture.
Grease an oven proof dish and pour the mixture into it. Bake in a preheated oven (190 degrees Celsius) for about 30 minutes, or until the mixture is pale brown on top.
